Orange Lightning Cake

What You’ll Need:

Food Processor.

20 cm cake tin.

Baking paper.

One orange  –  unpeeled

Baking Soda  - 1 tsp

Softened Butter – 125g

Vanilla essence – 1 tsp

Chopped Walnuts – ½ cup

Two eggs

Sugar – 1 cup

Flour – 2 cups

Sultanas – 1 cup

What to Do:

  1. Grease sides of 20 cm cake tin.  Line bottom with baking paper.

  2. Cut orange in quarters (remove seeds if any).  Whiz in food processor until finely chopped

  3. Dissolve one teaspoon of baking soda in half a cup of water, and add to food processor with the butter, eggs, vanilla, sugar, and flour.  Whiz to combine.

  4. Take blade out of food processor and stir in the chopped walnuts and the sultanas

  5. Pour into cake tin and bake for 50 to 60 minutes at 160C.

Voila!
